Livestock farmers in southern Tunisia have developed several strategies for dealing with climatic variability, seasonal drought, and prolonged drought. One approach is to take advantage of favourable seasonal conditions to create feed reserves so that the dietary needs of their herds are met. Farmers may notably collect crop residues, such as olive leaves, or non-crop species. Esparto grass or "alfa" (Stipa tenacissima L.) is one of the best-known non-crop species found in the mountainous part of southern Tunisia. We carried out a study in south -eastern Tunisia that focused on traditional livestock farming practices. It explored the effects of incorporating dried olive leaves and esparto grass into the dietary- regimes of livestock. To this end, we performed an experiment using 20 goats belonging to local farmers. They were assigned to one of two groups (n = 10 goats each). The control group (Group C) was fed oat hay. The experimental group (Group STO) was fed esparto grass hay containing dried olive leaves. The diets of both groups were supplemented with commercially produced concentrate (500g). Milk yield was similar for both groups, as were milk density, protein levels, and lactose levels. In contrast, milk fat content was higher in the experimental group than in the control group (5.44% vs. 5.01%, respectively). Esparto grass is currently used as a source of forage, and its incorporation into the feed given to dairy- livestock could improve milk nutritional quality.
